~ Homemade Granola 🥰 ~ I’ve wanted to make my own granola for so long but never really did... but last week when I had some free time I figured it was a perfect moment to give it a try! 😌 . This granola came out soo good 🥰 I’ll definitely will be making my own granola more often! 👌🏼 . . • Ingredients: - 150g rolled oats - 100g mix of unsalted nuts - 25g pumpkin seeds - 25g sunflower seeds - 1 tsp cinnamon (or add more to your preference, like I did) - 4 tblsp honey (or maple syrup) - 3 tblsp sunflower oil . ➡️ Mix everything together in a bowl. Then put it on a baking stray with baking paper. Bake in the oven for 15-20 minutes on 180 degrees. Turn around the granola after 8 minutes! . . I hope you will enjoy it as much as I do! 😍

🥢 TRYING OUT TERIYAKI TEMPEH 🥢 My thoughts on the new @tofooco tempeh...⁣ ⁣ I found the new Tofoo Co tempeh in @sainsburys the other day and I thought I’d try it out by frying it with some of my fav teriyaki sauce from @thebluedragon 🐲⁣ ⁣ You can also bake the tempeh if you prefer. But that takes a little longer and I wasn’t prepared to wait 😂⁣ ⁣ I get hangry ok... 🙈⁣ ⁣ I thinly sliced it and marinated it for 10-15 mins in some soy sauce and teriyaki. ⁣ ⁣ Then fried it (flipping every minute) for about 8 minutes. It says fry for 5 mins on the box but I did it on a slightly lower heat than they suggested, as I didn’t want the sugar in the marinade to burn. ⁣ ⁣ Overall I *quite* liked this tempeh. Considering I’ve never cooked it myself I thought it was pretty easy to make, as it’s similar to cook to tofu. I think the reason I didn’t love it was because I just prefer tofu. Tofu seems to go crispier on the outside which I like. This is a good alternative if you are bored of tofu and just want to try something new, but I’m not sure it’ll become a staple in my diet just yet. ⁣ ⁣ I served mine with whole grain rice, kale, and sesame seeds. I steamed the kale with lime and nori salt - the new @wickedhealthy one. I’m not sure I could taste the nori though... maybe I didn’t use enough 🤷🏻‍♀️⁣ ⁣ 🔥 Have you tried the new @tofooco tempeh yet❓What did you think❓⁣

I’m just obsessed with nachos. and it’s honestly one thing I can confidently say I make better than any person/restaurant I’ve tried! These have a base of roasted sweet tater chips and black beans. Spaghetti Carbonara with Vegan ‘Bacon’ by @thetastyk. Recipe below 🍝 300g brown rice spaghetti fresh parsley for serving Carbonara Sauce: 1 cup raw cashews, soaked for min. 4 hours 1 cup plant milk ½ tsp kala namak (black salt) 3 Tbsp nutritional yeast 3-4 garlic cloves 2 tsp cornstarch 2 Tbsp lemon juice ½ tsp black pepper Vegan Bacon Bits: 1-2 rice paper sheets 1 tsp olive oil 1.5 Tbsp soy sauce 2 Tbsp warm water 2 Tbsp nutritional yeast ½ tsp maple syrup ½ tsp smoked paprika (or liquid smoke) dash of black pepper & garlic powder 1.Cook the pasta according to package instructions. 2.First make the Rice Paper Bacon. Take two rice paper sheets, lay them above each other and cut into strips with a kitchen scissor. Add all the marinade ingredients together in a small bowl and mix well. Line a baking tray with parchment paper and pre heat the oven to 175°C/350°F. 3.Prepare a bowl with warm water and place it next to the bowl with the marinade. Take two strips of rice paper, press them onto each other and dip into the warm water until it becomes slightly soft. Next, dip the double strip into the marinade and place onto the baking tray. Repeat this process until all strips are gone. Use a pastry brush to add the remaining marinade to each strip. 4.Place the baking tray in the oven and bake for 5-7 minutes. Make sure to check the strips regularly as they burn very quickly. Once crispy, take them out of the oven and let cool down. 5.Make your carbonara sauce by simply adding all ingredients into a blender or food processor and blending until smooth and creamy. 6.Once the pasta is al dente, drain the water from pasta and return to the pot. Pour in the sauce and stir until pasta is well-coated. Take the ‘bacon’ strips, break them up into little bits and add to the pasta. QUINOA S TEMPEHEM A ZELENINOVOU OMÁČKOU🥒🍅🥦🍜 -------------------------------------------------------------- - quinoa - uzený tempeh Omáčka - oliv. olej - kus pórku (na nudličky) - půlka cukety (na kolečka) -1/3 květáku (na malé růžičky) - 1 stroužek česneku (na tenké plátky) - 3 rajčata ( na měsíčky) - sůl, pepř - půl lzičky mleté papriky - lžička rýžového sirupu Quinou uvaříme podle návodu a tempeh osmažíme na oliv oleji. Mezi tím si na oleji osmahneme pórek, přidáme česnek, cuketu, květák a necháme smažit. Když je zelenina osmahlá, tak přidáme rajčata a vývar/ vodu a dochutíme solí, pepřem a mletou paprikou. Dusíme do měkka a pak rozmixujeme tyčovým mixérem do hladká. A je hotovo. Total game changer! ••• I prepared my basic oatmeal recipe (50 g whole grain rolled oats, mixed together with 250 ml water/milk of your choice and a pinch of salt and cooked in a pan until all liquid was absorbed) and transferred it to a bowl. Baked falafel nourish bowl for lunch today 🌈 filled with alllll the colours! This was my first time making the falafel myself and I was really pleased with how they turned out. I want to make them a couple more times before sharing the recipe though, as I can’t remember the exact measurements and timings... really need to start writing things down! 😂 ⁣ ⁣ Hope you’ve all had a good week so far. A heinous quantity of Pesto spaghetti with roasted red onions, cherry tomatoes and mushrooms, topped with grated applewood (obvs) with a garlic wrap 🍝 • I went to all that effort to use a ladle to make those gorgeous spaghetti swirls and then just threw all the roasted veggies on top and hid the whole lot! Nice one Anna. ✨ • Also really fancied garlic bread and realised I didn’t have any, so I used a leftover wrap from last nights fajitas and topped with flora, garlic powder, mixed herbs and cheese and baked for 5 minutes and it was lovely 🌻 I wanna clarify this isn’t an attempt at ‘skinny garlic bread’ (I’ve seen this recipe a lot on slimming world accounts etc), I was just using what I had. I don’t fuck with ‘skinny’ or ‘guilt free’ versions of food, just eat what makes you feel good and #fuckdietculture 💛

Tuna mayo and sweetcorn sandwich using the @lomalindauk tuna mayo packet from @morrisons 🥪 Added my own sweetcorn and some more mayo to it because I love things overdone with sauce but this was really tasty! I like making “chuna” with chickpeas but this is an easy alternative and only 80p!

Plant based vegan 🌱 isn’t boring food it’s colourful, it’s dynamic, it’s deliciously yummy 😋 🌱 organic mushrooms 🍄 stroganoff served with organic non GMO polenta ...... sautéed red onion, add some spring onions, add finely sliced celery, then sliced mushrooms, add a teaspoon of capers and a teaspoon of yellow mustard🌱 add a tablespoon of flour or a teaspoon of cornflower mixed with a little cold water🌱wilted it 🥄 for a few minutes then add some vegan stock about a cupful and some chopped parsley plus salt and pepper (cayenne pepper too if liked) cook on low for 10 to 15 minutes. Hoy he estado super productiva, y además de hacer estas riquísimas veggieburger rústicas, me ha dado tiempo de subirte la receta a la web!!! La tienes en "platos especiales" porque quiero en esa sección poner todo un repertorio de hamburguesas veganas con distintos ingredientes, sabores y texturas. Son rústicas, porque está todo cortado a cuchillo para encontrar tropezones de cada ingrediente. Mmmmmmm ¿Qué llevan? Pues verduritas (cebolla, zanahoria, pimiento y berenjena), legumbre (garbanzos y soja texturizada) y cereal (avena). ¿Puede ser nutricionalmente más completa? Las he combinado con arroz basmati y he disfrutado comiendo como una enana.
